Our winery is the center of the universe at Flat Creek Estate during the rush of harvest and as the serious business of producing quality Texas wines ensues. Our fermentation tanks are all in use as production begins. From dawn to dusk and often beyond, there’s activity in the laboratory and winery with chemistry monitored, pumpovers, punch downs, filtering and endless cleaning. Transfer to oak is eventually part of the process for the wine aged in small oak barriques, while other wines continue maturation and stabilization in the stainless fermentation tanks.

The winery preparation begins long before the first grapes arrive at the crush pad. Every vintage we carefully evaluate each piece of equipment completing repairs, replacements and even bringing in the technicians from France or California to ensure the best possible performance every step of the way. In the winery, our tanks are prepped and checked as well to assure that each time we process fruit and select a specific tank, the must will be treated in the best possible way.

New barrels arrive from France and Hungary while older barrels are prepared, evaluated and readied for the new vintage. The anticipation mounts as the grapes begin to ripen. Once netting is applied, the daily inspection of each vineyard continues while grape chemistry is monitored. As the decision is made to begin the picking, the Flat Creek Estate Harvest Team springs into action. Usually the Pinot Grigio is harvested first with the other varietals maturing over the next 3-5 weeks.

If you visit during vintage, the winery and laboratory are particularly interesting venues. The allure and romance...as well as the long hours and hard work of wine production..are apparent when you spend time with the winemaker. With the 5,500 case winery at capacity each vintage since 2004, careful planning for the optimal use of tankage is required. We look forward to an expansion of the winery capacity and the resulting increase in production of our extraordinary Texas wines here at Flat Creek Estate.
